At Pahadi Mitti Se, we preserve the purity of Himalayan agriculture with minimal, conscious intervention:

  1. High-Altitude Terrace Farming: Grown on the clean slopes of Barot Valley, fed naturally by crisp mountain air, rich organic soil, and mineral-dense glacier-fed water.

  2. Traditional, Chemical-Free Practices: Hand-tended by generational hill farmers using natural compost and companion cropping, completely free of synthetic sprays, chemical fertilizers, or pesticides.

  3. Sun-Cured in Mountain Courtyards: Once harvested, whole pods are sun-dried across open stone courtyards under the pure Himalayan sun until properly cured.

  4. Artisanal Winnowing: The pods are threshed and hand-winnowed using traditional bamboo baskets to remove dust and chaff without harming the delicate bean skin.

  5. Completely Unpolished: Never treated with water, oil polishing, or talc. Hand-packed into food-grade, resealable kraft pouches to lock in natural freshness and preserve wholesome pantry shelf life.

Cooking Guide (The Himalayan Kitchen Style)

    • Soak: Wash thoroughly and soak in fresh water for 6 to 8 hours (or overnight). The water will take on a natural dark hue from the antioxidant-rich skin—keep this water for cooking to retain maximum nutrients.

    • Cook: Pressure cook in the soaking water with a pinch of rock salt, turmeric, and a bay leaf for 5 to 6 whistles on medium flame until tender.

    • Prepare: Heat mustard oil or pure desi ghee in a pan; temper with cumin seeds, hing (asafoetida), grated ginger, garlic, chopped onions, and crushed tomatoes. Simmer the cooked beans on low heat for 10–15 minutes, lightly mashing a spoonful against the side of the pot to create a creamy, rich gravy. Serve hot over steamed rice, Pahadi red rice, or freshly made flatbreads.

Q1: How does Black Rajmah differ from standard Red or Chitra Rajmah?

A: Black Rajmah is a heritage mountain variety with a distinct, deeply savory, slightly smokier undertone and a firmer skin. Its dark seed coat provides extra anthocyanin antioxidants, and it yields an exceptionally thick, dark, and flavorful gravy.

Q2: Why does the cooking water turn dark or purplish-black?

A: That color is completely natural! It comes from anthocyanins, the natural plant pigments in the bean's skin. It is not an artificial dye—in fact, cooking the beans in that water preserves vital nutrients and enriches the dish's flavor.

Q3: Is this product polished with oil or wax?

A: No. Pahadi Mitti Se Black Rajmah is 100% unpolished. We do not use any commercial buffing, talc, or mineral oils. You receive the whole bean exactly as it was harvested from the valley.

Q4: Does Black Rajmah take longer to soften?

A: Because of its dense, wholesome grain structure and intact outer coat, overnight soaking (6–8 hours) is recommended. Once soaked, it cooks evenly and softens into a buttery texture in about 5 to 6 whistles.

Q5: How should I store the unpolished beans?

A: Keep the pouch tightly sealed using the resealable zipper, or store the beans in an airtight container in a cool, dry pantry away from direct heat and moisture. A dried bay leaf or two whole cloves inside the jar will naturally deter pantry pests.
